File Culinary arts students with Assiniboine Community College stage the 2015 Grey Owl dinner at the college’s North Hill campus. Tickets for this year’s Grey Owl have already sold out.

The dinner is hosted by more than 80 students and faculty in the culinary arts and hotel and restaurant management programs, who work together to create the menus, design the drinks, cook in the kitchen and serve the diners.

The event is meant to offer a hands-on learning experience for students in both faculties.

Penned as the pearl anniversary, this year marks three decades worth of Grey Owl restaurants since it began at ACC’s Victoria Avenue East campus in 1987.

The restaurant took a one-year hiatus in 2007 when the Manitoba Institute of Culinary Arts (MICA) opened.

The dinner will serve close to 1,400 patrons over 20 nights at the former Brandon Mental Health Centre’s Nurses’ Residence at the college’s North Hill campus.

To mark the occasion, as well as the 10th anniversary of MICA, new dishes and cocktails were created, including birthday cakes, a St-Germain-based cocktail and a white pearl martini.

The dinner will also feature a beet and chocolate soup, New York strip loin, and Grey Owl favourites such as the rack of lamb, crème brûlée and Turtles cheesecake.
