Komfort Kitchen is expanding to accommodate growing business demands, marking a significant milestone in the local restaurant’s 20 years of operation.

The new addition measures 16 feet by 39 feet, featuring 10-foot ceilings and a full basement. This expansion aims to improve kitchen operations, increase storage capacity and introduce a new retail space offering frozen meals, protein products, coffee and ice cream.

The expansion was necessary due to increasing catering services and limited kitchen space, owner Derek Woychyshyn told the Sun Thursday afternoon.

“We needed more kitchen space,” Woychyshyn said. “We were standing on top of each other back there. With the amount of food product coming in, we were running out of room for cold, frozen and dry storage, as well as general working space.”

To address this, Komfort Kitchen acquired an adjacent property, allowing for a major upgrade, including a new walk-in cooler and freezer. The additional space will free up the existing kitchen and provide more room for food preparation. The renovations also included removing an old staircase and upgrading the structure to meet fire code regulations.

Beyond the kitchen expansion, the expansion includes a separate retail storefront accessible from the sidewalk.

“This section will house the frozen dinner offerings that gained popularity during the COVID-19 pandemic,” he said. “We’re expanding the number of frozen meal varieties, as well as adding frozen protein products like steaks and chicken breasts in larger quantities at good prices.”

The retail space will also include a hard ice cream dipping cabinet, a coffee station serving cappuccinos and lattes, and a refrigerated display case featuring grab-and-go snacks, salads and desserts.

“It’s another way to serve the community, making it easier for people to grab something quickly,” he said.

With the expansion, Komfort Kitchen is also looking to hire four to five additional employees, including two more cooks, retail staff and a dishwasher. The goal is to ensure the dining area and retail store operate smoothly without overburdening the current team.

The $300,000 investment into downtown Brandon did not come without challenges. During construction, unexpected structural modifications were needed due to the original 1910 foundation.

“We found a few things that they did differently back then, so we had to make some upgrades, which delayed the process and added to the costs,” Woychyshyn said.

Despite these challenges, Komfort Kitchen is set to open the expanded space by the end of March. While Woychyshyn has no immediate plans for further expansion, he remains open to new commercial opportunities in the future.
